does anyone know how to determine the color of the shock panel cover assembly

The data-plate on your door entry sill should describe the original interior scheme. You might also obtain that info from Cessna publications. The panel cover would match that original color.
Another possibility might be to look beneath old panels, sidewall upholstery, beneath seats at seat frames, etc.. to discover a portion of original paint.
